Pumpkin juice with dried apricots: how to make an autumn drink to improve your mood

When it’s cold outside, the leaves rustle under your feet, and somewhere in your soul, you crave warmth and comfort – it’s time to prepare a lunch portion of the sun.

We offer you a recipe for pumpkin juice with dried apricots—a drink that resembles the liquid gold of autumn: rich, aromatic, soft, with a slight sour taste. This juice is not only tasty but also helps improve your mood and strengthen your immunity during the cold season.

Required ingredients:

Pumpkin – 2 kg, cut into pieces
Dried apricots – 1 kg (it is better to choose bright, not too dry)
Water – 5.5 liters (2 liters for cooking, and another 3.5 extra)
Citric acid – 1.5-2 tsp
Sugar – 200 g (you can increase if you like sweeter juice)
Preparation:

Cut the pumpkin and dried apricots into small pieces. Already at this stage, the aroma of autumn is felt.
Pour the ingredients into 2 liters of water and cook over medium heat for about 20-25 minutes, until the pumpkin is soft and the dried apricots turn amber.
Turn off the heat and blend the mixture until smooth.
Add sugar, citric acid, and the remaining water (3.5 liters) and mix thoroughly.
Return the mixture to the heat, bring to a boil, and cook for another 5 minutes.
Pour the hot juice into sterilized jars and immediately close the lids.
Tip: To further enhance the flavor, add a pinch of cinnamon or a little vanilla while cooking—it will give your kitchen the aroma of an autumn miracle. The cooled juice can be stored for a long time. It is excellent as a chilled drink, but it is especially delicious warm, with a slice of lemon or a spoonful of honey.
