Ingredients:

2 carrots
2 eggs
150 g of sugar
100 ml of oil
200 g of flour
1 tsp baking powder
0.5 tsp cinnamon
50-70 g of walnuts
For the cream:

200 g sour cream (30%)
150 ml of cream (33%)
4 tbsp. sugar
Cooking process:

Start by preparing the dough: beat the eggs with sugar until thick, then add the oil and grated carrots. Mix well – you will already feel a pleasant aroma!

In a separate bowl, mix the flour, baking powder, and cinnamon. Sift into the dough and mix gently. Add the chopped nuts, leaving some for decoration.

Transfer the dough to a greased form or a lined baking pan, and place in an oven heated to 180°C for 30-40 minutes. Check readiness with a wooden skewer – it should be dry.

While the cake is cooling, prepare the cream: beat the cooled cream to thick peaks, then add the sour cream with sugar and beat again until it reaches an airy consistency.

When the cake has cooled, spread it generously with cream and decorate with nuts.
