Crispy rolls with filling and tomatoes: an original zucchini recipe
Summer is the perfect time to cook zucchini dishes. But what if the usual fried zucchini with mayonnaise has become boring?
We suggest trying to make delicious and original zucchini rolls with a filling! You will need the following ingredients:
two zucchini;
One tomato;
three eggs;
280 g of Greek yogurt;
100 g of cheese (you can use any);
a bunch of dill;
4-5 cloves of garlic;
salt, pepper;
breadcrumbs;
Beijing cabbage or lettuce leaves.
Preparation
First, cut the zucchini into thin slices. It is more convenient to use a greater for this. Place the slices on a baking sheet, sprinkle with salt, and gently mix so that the salt is evenly distributed. Please preheat the oven to 180°C and begin preparing the filling.
Finely chop the dill and garlic (you can use a press or grater), and grate the cheese. Place these ingredients in a large bowl, add the Greek yogurt, salt, pepper, and mix well.
Cut the tomato into slices.
Break three eggs into a separate bowl and beat them thoroughly with a fork. Pour the breadcrumbs onto a plate.
Line a baking sheet with parchment. Dip each zucchini slice in the egg first, then roll in the breadcrumbs. Place them on the baking sheet, leaving a small distance between the slices. Bake for 10 minutes in an oven preheated to 350°F (180 °C).
Divide the Chinese cabbage into leaves, removing the white part.
Taking a slice of zucchini, spread the filling on it with a teaspoon, add a half-cabbage leaf and a slice of tomato, and then carefully roll up the zucchini. For this dish, lettuce leaves can also be used as a substitute for cabbage.
These light and tasty rolls can be a great lunch or dinner. They are convenient to take with you on a picnic or to the dacha. Tasty and healthy!
